Schools dish up fresh, healthy California food

New food items displayed on table, including ribs, fruits and veggies

Crunchy cauliflower, crisp celery, sweet oranges and tangy grapefruit are just a few of the new California fruits and vegetables students across the district can now enjoy with their school lunch. 

San Diego Unified food & nutrition services released new composed salads in celebration of Farm to School Month this October. These tasty combinations not only bring new flavors to students but they also help to support local producers and California farmers. 

Available on school salad bars at participating schools are the Citrus Explosion Salad – a flavorful combination of oranges, grapefruit and mint pulled together with a sweet honey mustard dressing made by Green Bellies, a local San Diego company; the Buffalo Cauliflower Salad – a savory side dish that pairs cauliflower and celery with buffalo sauce, a popular flavor profile with students; and the California Carrot and Raisin Salad – a sweet blend of sliced carrots and raisins held together with the Green Bellies honey mustard dressing. 

The composed salads fall in line with San Diego Unified’s effort to offer more made-from scratch meals using California produced food. 

“We really believe in California food for California kids,” said Fred Espinosa, manager of acquisition and production for San Diego Unified food & nutrition services. “We’re really trying to source from local farmers, not only produce, but also chicken and proteins, grains and dairies for our children.” 

Earlier in the month, the food & nutrition department released several new, limited time offer menu items in celebration of National School Lunch Week. Students at participating schools can choose from made-from-scratch pulled pork sandwiches and pork ribs that are overnight roasted in high-tech “combi” ovens, a western bacon cheeseburger with turkey bacon, American cheese and drizzled with BBQ sauce, or the fish n’ tots basket.
